Raw beef on Tenderstrip flat
Ingredients
4 people, about 35 minutes
400 g Tenderstrip Flat
20 drops of tabasco
2 tablespoons Dijon mustard
2 tablespoons shallots, finely chopped
2 tablespoons small capers, chopped
2 tablespoons capers, whole, for garnish
2 tablespoons gr sl k, finely chopped, save a little for garnish
2 tablespoons gherkins, finely chopped
1-2 tablespoons whiskey, Laphroaig or similar
salt and pepper
4 egg yolks
Chop the meat with a knife or grind in a 5 mm meat grinder. Put in a pile. Till tt tabasco, mustard, shallots, capers, gr sl k, gherkins, whiskey, salt and pepper. Mix well and place in the fridge. Fry the whole capers lightly.
Shape the steaks according to the desired shape, top with a yellowish, slightly gray onion and the fried capers.
Serve with french fries if you want it as a main course.
