NZ Venison burger with healthy hidden vegetables

 
 

Ingredients

One of the ways to get vegetables into the kids is to hide them. Here we finely grate zucchini and mix it into the venison patty. NZ venison is a very lean and healthy red meat so the zucchini, with its slightly nutty flavour really matches well and adds moisture to the burger.

For the venison patty:

  • 700 g Minced venison

  • 1 smallish zucchini very finely grated

  • 2 tablespoons of chopped parsley leaves

  • 1 shallot finely diced

  • 1 clove of garlic finely diced or minced

  • 1 tbsp of ginger minced or finely diced

  • ½ tbsp of salt 

  • 1 tsp of cracked pepper

  • 3 tbsp of bread crumbs

Mix all the ingredients together in a bowl and then form into 4 equal sized patties. Pan fry the patties for a couple of minutes each side. Serve immediately on the toasted brioche with the sauces, salad and sliced tomato.

For the burger:

  • 4 brioche buns, toasted

  • A salad mix with sprouts, mixed leaf

  • Thin ribbons of cucumber

  • Cornichons thinly sliced

  • 2 tomatoes thinly sliced

  • Your favourite sauces, mayo, chutney, ketchup, bbq sauce, whatever you fancy!

Sides like sweet potato fries, coleslaw or wedges.
